Got a few beets lingering in the fridge? Well, then it's about time to make some borscht. This easy and healthy vegan borscht recipe requires just a few ingredients - and only a little bit of your time.
Sometimes you just need a bowl of soup. Well, I can only speak for myself but I truly believe that I am not the only all-year-round soup lover in this world. I actually prefer creamy soups - no chunks, just a luscious, rich blend of veggies and some coconut milk or cashews. Like this Roasted Cauliflower-Soup with Chestnuts or my Happy Tummy Tomato Soup. But recently I was really craving a chunky borscht soup. And, well, I apparently loved it so much that I have to share it with you.
In case you've never had borscht before or haven't even heard of it - it's about time you give it a try. Borscht is a soup that is very popular in Eastern Europe. It's made from beetroots and usually some sort of cabbage. I've never been a big beetroot fan but there is something about this soup that I really love - and it's not only the colour!
As I never stick to recipes (not even my own!), I gave this dish a little twist and added swish chard. Potatoes make this recipe also more wholesome and filling. In terms of spices, I am pretty sure your spice rack already provides everything you need to make this recipe: Salt and pepper. Yes, that's it. A little squeeze of fresh lemon juice at the end and you're good to go. You are also welcome to add fresh dill but I personally don't need it.

Simple Vegan Borscht

make some borscht. This easy and healthy vegan borscht recipe requires
just a few ingredients - and only a little bit of your time.
Ingredients
- 1 onion
- 2 garlic cloves
- 1 ¾ cup potatoes, peeled and diced ((250 g))
- 1 ½ cup beetroot, peeled and diced ((220 g, 3-4 beets))
- 3 large swiss schard stalks with leaves
- 3 ½ cups vegetable broth
- ½ tsp salt
- freshly ground black pepper
- 2 tbsp lemon juice
Instructions
- Dice the onion and mince the garlic. Sauté for 5 min in a large pot in a bit of water or vegetable broth.
- Wash the chard, dice the stalk and shredd the leaves. Add all the veggies plus the broth to the pot and bring to a boil. Simmer for low to medium for 30 min.
- Add the lemon juice and season with salt and pepper to taste.
- Serve with vegan sour cream and fresh dill or parsley.
