Simple Vegan Borscht

Description

Got a few beets lingering in the fridge? Well, then it's about time to
make some borscht. This easy and healthy vegan borscht recipe requires
just a few ingredients – and only a little bit of your time.


Ingredients

Scale
  • 1 onion
  • 2 garlic cloves
  • 1 3/4 cup potatoes, peeled and diced ((250 g))
  • 1 1/2 cup beetroot, peeled and diced ((220 g, 34 beets))
  • 3 large swiss schard stalks with leaves
  • 3 1/2 cups vegetable broth
  • 1/2 tsp salt
  • freshly ground black pepper
  • 2 tbsp lemon juice

Instructions

  1. Dice the onion and mince the garlic. Sauté for 5 min in a large pot in a bit of water or vegetable broth.
  2. Wash the chard, dice the stalk and shredd the leaves. Add all the veggies plus the broth to the pot and bring to a boil. Simmer for low to medium for 30 min.
  3. Add the lemon juice and season with salt and pepper to taste.
  4. Serve with vegan sour cream and fresh dill or parsley.
