Ever tried roasted cabbage steaks before? You're going to love this wonderful hearty side dish topped with a garlicky, oil-free hemp dressing and juicy pomegranate seeds.
Who would have thought that cabbage can be so much more than slaw? Honestly, these roasted cabbage slices blew my mind. So juicy, savory - not very pretty, I agree. But don't be fooled by their appearance. And, actually, if you "dress them up" nicely they make a fancy looking side dish, right?
As fancy as they look, the cabbage steaks plus the hemp sauce are actually super easy and quick to make. So this recipe is perfect for bringing your weeknight dinners to the next level.
Slice & Roast
First things first: Slicing up that cabbage. I would recommend cutting from the top down to the stem and then removing the tough parts of the stem. The slices should be around 0.5 cm (0.2 inch) thick to get the best results. If too thin, they might burn and if too thick they will not soak up the flavours of the marinade.
Which brings me to the next point, the marinade. It's actually only maple syrup, a bit of dijon mustard and soy sauce stirred together which is then slathered over the cabbage slices. After roasting you'll end up with caramelized, savory, juicy vegan cabbage steaks.
Gimme those Omega-3s!
Now let's get to that amazing dressing! Whenever I make a creamy sauce, I tend to use cashews. Recently I discovered that hulled hemp seeds work just as well and they are adding an extra dose of healthy omega-3 fatty acids to the dish. I also like their mild nutty flavour which works really great with the roasted cabbage.
To make the hemp seed dressing you simply blitz it up the seeds with spices, spring onion, water and lemon juice. No need to soak the hemp seeds as they are naturally quite soft.

Roasted Cabbage Steaks with Hemp Dressing

Ingredients
Cabbage Steaks
- 1 medium to large white cabbage
- 1 ½ tbsp maple syrup
- 1 tsp dijon mustard
- 2 tsp soy sauce or tamari
Hemp Dressing
- ¼ cup + 1 tablespoon hulled hemp seeds (45 g)
- ¼ cup water
- 1 small spring onion, green and white part
- ¼ tsp garlic powder
- 2-3 teaspoon lemon juice
- ¼ tsp salt
- black pepper to taste
- pomegranate seeds and parsley for garnish
Instructions
- Preheat the oven to 170 °C (340 °F).
- Slice the cabbage into 6-8 slice of 0.5 - 0.8 cm (0.2 - 0.3 inch) thickness.
- Put the cabbage in one layer on a lined baking tray. Use two trays if needed.
- Stir together the maple syrup, dijon mustard and soy sauce and generously onto the cabbage slices.
- Bake for 35-40 min until nicely browned.
- In the meantime blend all the ingredients for the hemp dressing until smooth. Place in the fridge until the cabbage is done.
- Serve the roasted cabbage steaks with a drizzle of the hemp sauce, pomegranate seeds and chopped parsley.
- Store leftovers in the fridge for up to 6 days.
