A crunchy cookie base, a sweet yogurt topping, fruity berries and a dark chocolate sauce - this vegan cookie pizza is the ultimate summer treat!
Summer, sunshine ... and pizza. Well, pizza doesn't really fit here I guess. But how about a sweet pizza with lots of fresh berries? Sounds so much better, right?
Let's start with the base. We're not going to prepare yeast-based dough 'cause who has time for that?! We're simply going to make a large cookie from oat flour, cashew butter and coconut sugar. Not too bad, I would say. And it's chewy from the inside and crunchy on the outside, just how I (and hopefully you) like it.
As tomato sauce is probably not the best topping for a sweet vegan cookie pizza, I went for a vegan yogurt-based sauce instead. I used soy yogurt but you can also opt for almond or coconut yogurt. Simply add some cashew butter, vanilla and maple syrup and you've got yourself a tasty yogurt-topping.
Now let's come to the fruity component of the vegan cookie pizza. Berries, cherries, peaches, pomegranate seeds, banana slices, mango...whatever your heart desires, go for it.
Of course, we will need some kind of cheese substitute on our sweet vegan cookie pizza. And. I feel like a chocolate sauce is the perfect fit. It's made of only three ingredients: Cocoa, maple syrup and oat or almond milk. It also tastes great on pancakes., by the way. Now, there is nothing left to say other then "Bon appettit!".

Fruity Vegan Cookie Pizza

Ingredients
Cookie base
- ¾ cup oat flour (75 g)
- ½ cup cashew butter (140 g)
- ½ cup coconut sugar (60 g)
- 1 pinch of salt
- 1 tsp vanilla extract
- 1-3 tablespoon oat or almond milk, if needed
Vegan yogurt topping
- ⅓ cup soy yogurt, unsweetened
- 2 tbsp cashew butter (30 g)
- ¼ tsp vanilla extract
- 3-4 tablespoon maple syrup
Chocolate sauce (optional)
- 1 tablespoon + 1 tsp cocoa, unsweetened
- 1 tbsp maple syrup*
- 1 tbsp oat or almond milk
Others
- fresh berries, cherries, peaches
- chopped nuts
Instructions
For the cookie base
- Preheat the oven to 350 °C (175 °C).
- Combined cashew butter and coconut sugar in a large bowl and beat. Add the remaining ingredients and mix to combine.
- Shape the dough to a ball and place on a sheet of backing paper. Presse the ball down using your hands and place another sheet of baking or wax paper on top. Use a rolling pin to evenly roll out the dough until it's about 0.5 cm thick.
- Bake for 12-14 min until golden brown. Let cool completely.
For the vegan yogurt topping
- Combine all the ingredients and mix until smooth. Keep refrigerated.
For the chocolate sauce
- Add the ingredients to a small bowl and stir to combine.
- Spread the yogurt topping onto the cookie base. Garnish with fruits, chopped nuts, chocolate sauce and/or toppings of choice.
- Consume as soon as possible, as the cookie base will soften after a while.
Notes
*Add more maple syrup if you like a sweeter sauce.

Made this pizza last night! I didn't have cashew butter, so subbed almond butter. I ended up adding 1.5T of soy milk and the cookie turned out perfect! We topped with lots of strawberries.
