Who would have thought that it is so easy to make vegan protein pancakes without protein powder? I was searching for such a recipe a while ago - but unfortunately: dead end. So I ventured to create my own version of vegan protein pancakes that do not need the addition of isolted proteins. And, voila, here they are.
These pancakes are perfectly fluffy and don't fall apart in the pan and provide you with more than 17 g of healthy plantbased protein per serving! Oh, did I mention they are also gluten-free, oil-free and naturally sweetened? You're welcome!

I combined a few ingredients to make these vegan pancakes high in protein but still tasty. Chickpea flour came to my mind right away but it has quite an intense flavor so I needed something else. I went for buckwheat flour as an additional base ingredient. Buckwheat contains all essential amino acids, which makes it a complete protein and also a great addition to this recipe.
Then there is peanut flour. For flavour I wanted to have some kind of ground nuts or nut flour in there but at the same time aimed to keep it rather low in fat and calories. Peanut flour actually works out great as it is defattet and super rich in protein! And the pancakes do not actually have a strong peanut flavor!
For a subtle sweetness, I added banana and dates to these vegan protein pancakes. Personally, I don't need my pancakes to be super sweet as I usually top them off with fresh fruit and a good pour of maple syrup. How about you?

Description
These fluffy vegan protein pancakes without protein powder pack a punch! They are made with wholesome ingredients that keep you full and provide you with a load of healthy plantbased protein and other nutritients.
Ingredients
- ½ cup chickpea flour ((45 g))
- ½ cup buckwheat flour ((80 g))
- ¾ cup peanut flour, defatted ((80 g))
- 1 cup soy milk
- 1 large ripe banana
- 2 dates
- 1 tsp vanilla extract
- ¼ tsp cinnamon
- 2 tsp baking powder
Instructions
- Combine the dry ingredients in a bowl.
- Blend together the soy milk, banana, dates and vanilla extract until smooth. Add to the dry ingredients and stir to combine. Set aside for 4-5 min.
- Heat a non-stick pan. Use up to ¼ cup for each pancake and bake on low heat for 1-2 min per side. The recipe makes about 12 pancakes.
- If the batter starts to thicken while making the pancakes, add a bit of liquid to thin it out.
- Serve with fresh fruits and maple syrup.
