This naturally sweetened, wonderfully light & creamy vegan melon ice cream made with the Ninja Creami requires just four simple ingredients.

Summer is in full swing. Without our mobile air conditioning unit, it would be almost unbearable in our apartment on some days. One appliance that has also saved us this summer is the Ninja Creami ice cream machine. Since the trendy summer kitchen machine moved in with us, our ice cream consumption has increased enormously.

This post is not intended to be an ad for Ninja Cremi but it feels like everyone (I follow on instagram) has this appliance in their home.

In any case, I'm thrilled and that's why I'm sharing my first vegan Ninja Creami ice cream recipe today: a melon ice cream to be precise. You could also call it melon sorbet, as it's more on the fruity side. The best part: It's naturally sweetened, super light and wonderfully creamy.

Ingredients - What's in this Melon Ice Cream?

All you need are 4 ingredients: Fresh honeydew melon, some lemon juice and zest, a plant-based yogurt alternative such as soy or coconut yogurt and a few dates.

  • HONEYDEW MELON: The sweetest variety of melon! That's why it makes a great base for this melon ice cream. You should use ripe, juicy fruit. Unripe honeydew melons are not sweet enough and taste rather “cucumber-like”.
  • LEMON: Freshly squeezed lemon juice gives the ice cream a fresh kick. If you have an untreated organic lemon, I recommend adding some of the zest to the ice cream mixture as well.
  • VEGAN YOGURT: I used unsweetened soy yogurt. If you don't consume soy, you can also use creamy coconut yogurt.
  • SOFT DATES: The dates give the ice cream a little more natural sweetness. If you have your melon that is not quite as juicy and sweet, throw 1-2 additional dates into the blender.

FAQ

Can I also use other types of melon?

I haven't tested it myself yet, but I think Galia melons and cantaloupe melons will also work. However, these two varieties are not quite as sweet as honeydew melons, so perhaps double the amount of dates in the recipe.

I don't have a Ninja Creami, can I still make the recipe?

In this case, I would cut the honeydew melon into small cubes and freeze them in an even layer so they won't end up as a gib frozen ball. Then process the frozen melon cubes with the remaining ingredients in a high-speed blender. The result will not be quite as creamy, though.

What do I do if my dates are hard?

Soft dates are easier to process in a blender, especially if you are not using a high-speed blender. However, you can simply pour boiling water over hard dates, leave to soak for 10-20 minutes and then use them for the recipe in the same way as soft dates.

Description

This naturally sweetened, wonderfully light & creamy vegan melon ice cream made with the Ninja Creami requires just four simple ingredients.


Ingredients

Scale
  • 2 cups honeydew melon, cubes (270 g)
  • ½ cup soy or coconut yogurt (120 g)
  • 3 tbsp lemon juice
  • 3 soft dates
  • lemon zest of ½ lemon (optional)

Instructions

  1. Blend all the ingredients until smooth.
  2. Pour the mixture into a Ninja Creami container and place in the freezer for at least 12 hours.
  3. Remove the container from the freezer and put aside at room temperature for about 10 minutes.
  4. Then process in the Ninja Creami according to the instructions (light ice cream). If necessary, re-spin (with a splash of pland milk).
  5. Serve the melon ice cream immediately. Freeze any leftovers in the Ninja Creami container.

Notes

  • Make sure that the tub is on a level surface in the freezer.
  • If a small bulge has formed on the ice cream in the container after freezing, scrape it off with a spoon before further processing.
