All right, back to the recipe!
I don't know about you, but I like to have my daily mid-morning and afternoon snacks. I never make it until dinner, if I don't get something between my teeth between meals. Of course you don't want to have overly sweet snacks that are loaded with sugar, cause you will quickly realize that they are not very satisfying and your blood sugar levels will go on a little rollercoaster ride.
I really like sweet snacks, though, so I think these sweet carrot-nut snack bites are a reasonable compromise between having something sweet and keeping things healthy.
That's because these carrot-nut snack bites contain plenty of fiber and healthy fats from carrots and nuts and they are naturally sweetened - except for the chocolate, of course - but come on, we all need a bit of chocolate in our lives, don't we? However, if you are not a chocolate fan (if someone like that even exists), you can also enjoy them without the chocolate coating.
Coming to the preparation. I would say these little carrot-snack bites are pretty simple to make: Process the ingredients, roll them into small balls, bake, and dip them into as much chocolate as you like. Don't forget that coconut sprinkle! That's pretty much it! Make a batch on the weekend to enjoy as a snack during the week or share them with your friends.

Sweet Carrot-Nut Snack Bites

Description
In need for a little afternoon snack? Then try these naturally-sweetened carrot-nut snack bites. Filled with fiber & healthy fats, they will fill you up until dinner. Don't forget to share with your friends!
Ingredients
- 2 medium carrots, peeled (150 g)
- ½ cup raisins (70 g)
- 1 ½ cup pitted dates (200 g)
- ½ cup rolled oats (40 g)
- 1 tsp chia seeds
- ½ cup cashews (70 g)
- ½ cup almonds (70 g)*
- ½ tsp cinnamon
- 2 - 3 oz dark chocolate (60-80 g)
- shredded coconut, dried ((optional))
Instructions
- Pre-heat the oven to 320 °F (160 °C).
- Cut the carrots into smaller chunks.
- Add all ingredients except for the chocolate and coconut to a food processor and process for 10-20 sec until sticky but still slightly chunky.
- Wet your fingers if needed and roll the mixture to small balls. Makes about 20-23, depending on the size.
- Place the balls onto a lined baking tray and bake for about 16-18 min until slightly browned. Let cool.
- Melt the chocolate in a water bath, dip one side of each ball into the chocolate (or drizzle the chocolate over the balls) and place on a plate. Sprinkle with shredded coconut, if desired.
- Place in the fridge until the chocolate has hardened. Enjoy!
- Leftovers can be stored in the fridge for up to 7 days.

*You can also use other types of nuts (e.g. hazelnuts, walnuts).
