I am back. After a loooong break I finally returned with a new recipe. Why did it take so long? Well, it wasn't planned, that's for sure. New job, new city, appartment hunting, moving ... and all that stuff really kept me busy for a while.
During the last few months I really would have needed a few homemade granola bars like these. Trust me guys, I have never been happier before to be able to cook and bake and so on in my own kitchen.
For this recipe I needed a few rounds to get not only the flavours but also the texture right. The base is a mix of rolled oats, popped quinoa, peanuts and unsweetened cornflakes. They give the perfect crunch and are also rich in proteins and essenteal fibers that keep you full.
The fruitiness comes from dried figs. Why not raisins? Well, it seems like not many of my newly found friends call themselves raisin fans. But I feel like figs work perfectly in this recipe anyways. If you happen to be a sucker for raisins - like I am - then please go ahead and add some raisins. Or use both figs and raisins!
Last but not least we need something to give the granola bars that gooeyness. A mixture of nut butter like natural almond butter and rice syrup is perfect here. No need for baking! Simply pop the granola bar mixture in the freezer for a bit, cut it and they are done!
Oh wait, I almost forgot the best part: The chocolate glaze! Yes, a little chocolate doesn't hurt. And you actually don't need a whole lot for a proper drizzle on all 15 bars. Enjoy!

Description
Rolled oats, popped quinoa, cornflakes, peanuts and dried figs make these vegan granola bars a nutritious and delicious snack. And you don't even need to turn on the oven to make them.
Ingredients
- 1.5 cups rolled oats ((140 g))
- ½ cup popped quinoa ((15 g))
- ½ cup crushed cornflakes, unsweetened ((35 g))
- ½ cup roasted peanuts or cashews ((45 g))
- ¾ cup dried soft figs ((100 g, 7-8 figs))
- ⅓ cup natural almond butter ((80 g))
- 1 tsp vanilla extract
- ½ cup rice syrup ((150 g))
- 1 pinch salt
- 1-2 oz dark chocolate ((30-50 g))
Instructions
- Put the crushed cornflakes in a bowl with the oat flakes, the popped quinoa and the peanuts. Roughly shop the figs and add to the mixture.
- Heat the almond butter with the rice syrup, vanilla extract and salt in a small pot and stir to combine. Add the liquid ingredients to the dry ingredients and mix well with a spoon.
- Pour the sticky mixture into a baking dish lined with baking paper and press into the dish with a spoon.
- Place the baking dish in the freezer for about 30-40 minutes.
- Melt the chocolate shortly before removing the granola bars from the freezer. Cut into 14-16 bars and drizzle with the chocolate.
- Store the granola bars in the refrigerator for up to 7 days.
