Rolled oats, popped quinoa, cornflakes, peanuts and dried figs make these vegan granola bars a nutritious and delicious snack. And you don’t even need to turn on the oven to make them.

Ingredients

Scale
  • 1.5 cups rolled oats ((140 g))
  • 1/2 cup popped quinoa ((15 g))
  • 1/2 cup crushed cornflakes, unsweetened ((35 g))
  • 1/2 cup roasted peanuts or cashews ((45 g))
  • 3/4 cup dried soft figs ((100 g, 78 figs))
  • 1/3 cup natural almond butter ((80 g))
  • 1 tsp vanilla extract
  • 1/2 cup rice syrup ((150 g))
  • 1 pinch salt
  • 12 oz dark chocolate ((3050 g))

Instructions

  1. Put the crushed cornflakes in a bowl with the oat flakes, the popped quinoa and the peanuts. Roughly shop the figs and add to the mixture.
  2. Heat the almond butter with the rice syrup, vanilla extract and salt in a small pot and stir to combine. Add the liquid ingredients to the dry ingredients and mix well with a spoon.
  3. Pour the sticky mixture into a baking dish lined with baking paper and press into the dish with a spoon.
  4. Place the baking dish in the freezer for about 30-40 minutes.
