I know, I know. It's almost summer time and I am still having fun baking stuff. But trust me, this oil-free & sugar-free grape bread is just amazing. It's perfectly moist, has just the right amount of sweetness and its's also pretty healthy.
Don't get me wrong - this recipe will never replace all my beloved banana bread recipes (like this marbled version) but once in a while I just need a bit of a change. And a delicious change it is!
So recently I was standing in the kitchen thinking: What fruits can I use to naturally sweeten baked goods? Of course, dates came to my mind. But I wanted to try something new. Luckily, a bowl of fresh, juicy grapes sitting on the counter caught my eye. And that's how this recipe came about.
I did however end up using both grapes and dates to achieve just the right amount of natural sweeteness. By the way, are you team green or red? I actually prefer the dark red kind. I tried the recipe using both green grapes and red grapes - there was not really a difference, as expected.
What you shouldn't swap is the coconut milk. It gives the grape bread some richness and flavourwise it works really great in combination with the fruitiness of the grapes. Other than that you will need some spelt flour (sorry, this recipe is not gluten-free), plant milk and a few other ingredients you probably have in your baking shelf - and you're good to go.
After baking, let it cool, slice it up and enjoy plain. If you're feeling a little fancy: Slather a big slice of this vegan grape bread with your favorite nut butter! By the way, you can also freeze the slices and toast them up whenever you crave a piece. And don't forget that nut butter!

Ingredients
- 1 cup seedless grapes (150 g)
- ¾ cup soft dates (100 g)
- ¾ cup coconut milk from a can
- ⅓ cup plant milk
- 1 tsp vanilla extract
- ½ cup + 1 tablespoon light spelt flour (70 g)
- 1 ¼ cup wholegrain spelt flour (150 g)
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 handful seedless grapes (optional)
Instructions
- Preheat the oven to 320 °F (160 °C).
- Transfer the first five ingredients to a blender and blend until smooth.
- In a large bowl, combine the flours, plus the baking powder and soda. Pour in the wet inredients and stir to combine. Fold in the handful of grapes, if using.
- Bake for 45 minutes. Let cool completely before slicing.
