Sugar-Free Vegan Grape Bread

Description

Banana bread – step aside! This naturally sweetened vegan grape bread is the real deal. Toast it and slather it with nut butter for a pretty awesome and healthy breakfast, snack or dinner.


Ingredients

Scale
  • 1 cup seedless grapes ((150 g))
  • 3/4 cup soft dates ((100 g))
  • 3/4 cup coconut milk from a can
  • 1/3 cup plant milk
  • 1 tsp vanilla extract
  • 1/3 cup spelt flour ((70 g))
  • 1 cup wholegrain spelt flour ((150 g))
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 handful seedless grapes ((optional))

Instructions

  1. Preheat the oven to 320 °F (160 °C).
  2. Transfer the first five ingredients to a blender and blend until smooth.
  3. In a large bowl, combine the flours, plus the baking powder and soda. Pour in the wet inredients and stir to combine. Fold in the handful of grapes.
  4. Bake for 45 min. Let cool completely before slicing.
