I'm not a big bread eater (anymore) but I definitely won't say 'no' to fresh, warm buns or a crisp loaf of bread on a Sunday morning. When I go abroad, say to the Netherlands, I get to realize how great German bread really is. I really can't handle those soft slices that fall apart when I pick them up - which makes spreading my beloved peanut butter a pain in the neck. To me, good bread has to be dense and crusty.
That being said, my boyfriend and I only seldomly buy bread because a whole loaf is simply too much for the two of us. Luckily, we have a freezer. And it's always great to have some frozen slices of bread for toasting on hand, especially when you've got a ripe avocado lying around (and you probably all know the 'problem' with acovados - they take forever to ripen and once they're ripe you don't have much time to eat them before they're a bit too ripe).
I know, not everyone has a big freezer or even a freezer at all. That's why I bring you this wonderful bread-leftover-recipe: vegan bread pudding!
I've never made or even had vegan bread pudding before. And now that I think about it, I've never actually baked a non-vegan bread pudding before. So it was basically my first attempt and it came out amazing! It's really easy to make and requires only a few ingredients.
Let's start with a few slices (not too) old bread, a bit of plant-based milk and coconut milk for creaminess, maple syrup to sweeten, cinnamon and vanilla to spice things up and a few extras like nuts, raisins and carrot if you want. In the oven it goes and there you have your vegan bread pudding. It's actually great for this time of the year.

Vegan Bread Pudding

Ingredients
- 10 oz bread (280 g)*
- 1 large carrot ((optional))
- 1 cup oat or almond milk
- 1 can coconut milk
- ⅓ cup maple syrup (100 g)
- 2 tsp vanilla extract
- 1 ½ - 2 teaspoon cinnamon
- 1 pinch of salt
- 1 handfull of walnuts or almonds, chopped
- ⅓ cup raisins (60 g)
Instructions
- Preaheat the oven to 350 °F (180 °C).
- Cut the bread into cubes (not too small) and place in a large mixing bowl. Grate the carrot. Add the carrot, chopped almonds or walnuts and the raisings to the bowl and mix with the bread.
- Combine oat or almond milk, coconut milk, maple syrup, vanilla, cinnamon and salt in a seperate bowl.
- Pour the mixture onto the bread and carefully combine the ingredients.
- Immediately transfer the soaked bread into a large, flat baking dish and press down slightly using a spoon to even out the surface.
- Bake for 35-45 min until golden brown at the top. Serve warm with maple syrup.
Notes
* use a lighter, not too dense a few days old bread like sandwich bread for this recipe.
