Vegan Bread Pudding

Description

Got some leftover bread and don’t know what to do with it? Make bread pudding! This sweet dish is totally delicious and easy to make. Serve it as a dessert or even for a brunch.


Ingredients

  • 10 oz bread (280 g)*
  • 1 large carrot ((optional))
  • 1 cup oat or almond milk
  • 1 can coconut milk
  • 1/3 cup maple syrup (100 g)
  • 2 tsp vanilla extract
  • 1 1/22 tsp cinnamon
  • 1 pinch of salt
  • 1 handfull of walnuts or almonds, chopped
  • 1/3 cup raisins (60 g)

Instructions

  1. Preaheat the oven to 350 °F (180 °C).
  2. Cut the bread into cubes (not too small) and place in a large mixing bowl. Grate the carrot. Add the carrot, chopped almonds or walnuts and the raisings to the bowl and mix with the bread.
  3. Combine oat or almond milk, coconut milk, maple syrup, vanilla, cinnamon and salt in a seperate bowl.
  4. Pour the mixture onto the bread and carefully combine the ingredients.
  5. Immediately transfer the soaked bread into a large, flat baking dish and press down slightly using a spoon to even out the surface.
  6. Bake for 35-45 min until golden brown at the top. Serve warm with maple syrup.

Notes

* use a lighter, not too dense a few days old bread like sandwich bread for this recipe.
