When I was younger I used to love eating store-bought rice pudding as an after-school snack. It was so creamy and sweet (of course, ist is loaded with sugar). At that time I didn't know how easy it was to make homemade (healthier) rice pudding. Actually, I only recently tried making rice pudding myself. My first try was a total disaster. I ended up burning the whole thing. But I learned from my mistake.
Don't get intimidated from my little story. Making rice pudding is not a big deal. And you only need a few ingredients: Rice, plantbased milk, a sweetener and some spice like vanilla or cinnamon. What makes this recipe extra special is the pistachio milk. If you haven't tried my recipe for homemade pistachio milk yet, then you should do that ASAP. It's so tasty and gives this recipe a nutty and rich flavor.
Of course, you can use other types of plantbased milks, like oat or coconut milk, but come on, you have to admit that vegan pistachio rice pudding sounds much more intriguing!
So, put everything in a pot and let's get cooking. Just remember: Keep stirring! Keep the temperature low and have a spoon ready. You don't need to stir constantly, but definitely keep an eye on it. In case you do burn the rice pudding, quickly move it to another pot without scraping the bottom. You may need to add more pistachio milk afterwards.
30 minutes later and your dessert is ready. You can also put this pistachio rice pudding in the fridge overnight to enjoy it for breakfast the next day. Don't forget the fresh strawberries.

Vegan Pistachio Rice Pudding

Ingredients
- ¾ cup sushi rice (150 g)
- 2 ¼ cup pistachio milk
- 2 tbsp coconut sugar or raw cane sugar
- 1 tsp vanilla extract
- 1 pinch of salt
Instructions
- Put all the ingredients into on pot and bring to a boil.
- Simmer half-covered on low heat for 25-35 Minutes. Stir often to prevent it from burning.
- If the rice pudding thickens too much add more pistachio milk.
- Eat warm or cold. Serve with fresh berries or blend a few strawberries with maple syrup for a delicious berry sauce.
