Vegan Pistachio Rice Pudding

Description

Your sweet cravings are kicking in again? Then make a big batch of this vegan pistachio rice pudding. So creamy, sweet and delicious! Tastes best when served with fresh berries.


Ingredients

  • 3/4 cup sushi rice (150 g)
  • 2 1/4 cup pistachio milk
  • 2 tbsp coconut sugar or raw cane sugar
  • 1 tsp vanilla extract
  • 1 pinch of salt

Instructions

  1. Put all the ingredients into on pot and bring to a boil.
  2. Simmer half-covered on low heat for 25-35 Minutes. Stir often to prevent it from burning.
  3. If the rice pudding thickens too much add more pistachio milk.
  4. Eat warm or cold. Serve with fresh berries or blend a few strawberries with maple syrup for a delicious berry sauce.
