I love crunchy granola! Small clusters made of oats and nuts, swimming in a bowl of oat or almond milk - and then you take the first bite! Yum! Simply delicious! I am hoping that I am not the only one who has such strong feelings for a good granola?!
One thing that really bothers me about store-bought granola, though, is that long list of ingredients. It's unbelievable what is put in these boxes! Sugar, glucose syrup and palm oil are the most harmless ingredients. I mean, who needs whey powder in granola? Luckily, there are much healthier brands on the market nowadays but unfortunately those are usually more expensive. So why not make it yourself?
Great news: It's pretty simple to make homemade granola! The base is oats and nuts, as usual. They're going to give us that crunchy texture.
Granola has to be sweet so let's go with some maple syrup. A far better alternative to white sugar.
Most of the granola recipes that I've found on the internet contain oil. Since I try to avoid oil as much as I can, I needed another source of (good) fats. Nut butter to the rescue! And as there are plenty of nut butter types to choose from, this recipe is pretty versatile. Great, right?
And that's pretty much it! Just a bit of cinnamon and a pinch of salt and we are done.
The recipe makes about 3-4 servings - but be careful about who you are serving it to as it might end up being only 1 or 2 servings (I am talking out of experience!).

Ingredients
- 1 cup rolled oats (100 g)
- ½ cup + 2 tablespoon almonds (or other types of nuts) (100 g)
- ½ tsp cinnamon
- 1 pinch salt
- 1 heaping tablespoon tahini (or other type of nut butter) (35 g)
- ¼ cup maple syrup (75 g)
- (optional: dry fruits like raisins)
Instructions
- Preheat the oven to 300 °F (150 °C).
- Process ½ cup (50 g) of the oats together with the almonds until a coarse flour forms (you should still habe some almond pieces after processing).
- Mix the ground oat-almond mixture with the rest of the dry ingredients.
- In a small bowl combine the nut butter with the maple syrup and whisk until creamy. Then mix with the dry ingredients and use a spoon to incoorperate.
- Spread the granola mixture on a baking sheet and bake for about 25-30 min until golden. (It might still be a little moist, but will crisp up when it's cooling)
- Let the granola cool completely, add dry fruits if you like, and store in an air-tight container.
Notes
Keep an eye on the granola once in the oven! I've burned mine a couple of times. Depending on your oven and the settings you use, your granola might be done a little sooner or it might take a little longer.

I just made this recipe. I definitelly processed the oats and nuts to a flour texture because the end result taste delicious but its more like a cookie than granola:-)

This is DELICIOUS! I am so excited, b/c I always have these ingredients in my kitchen, and it was so easy to whip up. I made it with peanut butter and added some raisins. But I plan to experiment with this recipe (nuts/fruits/etc). You could probably even pack the mix together and cut to make really tasty granola bars. I might try that next time.
