These healthy vegan waffles are sugar-free and oil-free but still incredibly crispy, naturally sweet and simply delicious.
On the weekends, we either have bread rolls (a very German thing), pancakes or waffles for breakfast. Unfortunately, none of the healthy waffle recipes I found online has been able to knock my socks of, so I decided to come up with my own healthy basic vegan waffle recipe. All you need for my sugar-free and oil-free vegan waffles are a few wholesome ingredients, a waffle iron and a little patience during the baking process.
Personally, I think Belgian vegan waffles are much better than the thinner, heart-shape waffles you'll see more often here in German households. Belgian-style waffles are usually crispier on the outside and - due to their thickness - fluffy on the inside. Make sure to use a non-stick waffle iron. No need for greasing then!

The Ingredients for Healthy Vegan Waffles
- SPELT FLOUR: I use one part wholemeal flour and one part lighter spelt flour. This makes the waffles a little fluffier. However, feel free to go for 100% wholemeal spelt waffles.
- BAKING SODA & POWDER: … so that the waffles become nice and fluffy. If you have carbonated water on hand use that - you can leave out the baking soda then.
- CINNAMON & VANILLA: The two spices provide a rounded taste. However, you can also omit one of them, if you like.
- UNSWEETENED APPLESAUCE: The apple paste comes into play here as an egg substitute, but also adds a little more natural sweetness to the dough.
- ALMOND BUTTER: … is a wholesome alternative to margarine in this recipe and provides a slightly nutty note. Make sure to use a natural kind without added sugar and oil.
- DATE SUGAR: Date sugar is made from dried, ground dates and is therefore a great, healthy sugar substitute.
- WATER & PLANT MILK: As mentioned above, feel free to use carbonated water for even more fluffiness. Then you can also leave out the baking soda. I recommend opting for a pea or soy milk, but the recipe also works with oat milk or other varieties.
How to Make Vegan Waffles Without Sugar?
First mix the dry ingredients - flour, baking powder and soda plus cinnamin - and the wet ingredients plus the date sugar in separate bowls. Then combine them and stir to get a smooth waffle batter.
Put the batter aside for a few minutes. Pour the batter in the preheated, non-stick waffle iron and bake for approximately 7-8 minutes.
The result are these crispy, sugar-free and oil-free vegan waffles that can be topped however you like. Think vegan yogurt, maple syrup, peanut butter, homemade caramel sauce, fresh berries ... there are no limits to your creativity.
FAQ
Yes, that works really well. Simply put them in the toaster to defrost and crisp up again.
I haven't personally tested this yet, but I suspect that a gluten-free flour mix will work just as well.
Coconut sugar or raw cane sugar can be used as well. A liquid sweetener will not work in this waffle recipe.
Vegan Waffle Variations
As this is more of a basic recipe for oil-free vegan waffles, why not try the following variations? Our absolute favorite are the pear and ginger waffles.
- APPLE-CINNAMON WAFFLES: Double the amount of cinnamon and grate an apple into the waffle batter.
- VEGAN PROTEIN WAFFLES: Replace 40-50 g (¼ c.) of the flour with your favourite vegan protein powder. I recommend a vanilla or neutral flavoured protein powder.
- PEAR-GINGER WAFFLES: Replace the applesauce with (apple-)pear sauce, add a grated pear and 2 teaspoons of dried ginger powder to the batter. Not a must but adds more pear fruitiness: Use (unsweetened) pear juice instead of water. The waffles taste even better with a few pieces of chopped candied ginger in the batter.
- BLUEBERRY-LEMON WAFFLES: Leave out the cinnamon, fold a handful of blueberries and the zest of an untreated lemon into the batter.

Ingredients
- 8 oz spelt flour (half whole grain + half light spelt flour)
- 2 tsp baking powder
- ½ tsp baking soda
- 1 pinch of salt
- 1 tsp cinnamon
- ½ cup applesauce, unsweetened (120 g)
- ¼ cup almond butter (60 g)
- ½ cup date sugar (60 g)
- 2 tsp vanilla extract
- ¾ cup water (175 ml)
- 1 cup plant-milk (250 ml)
Instructions
- Sieve the spelt flour and baking powder into a bowl. Stir in the salt and cinnamon.
- In another large bowl, mix the applesauce with the almond butter, date sugar and vanilla extract. Then gradually add the water and plant-milk.
- Add the dry ingredients and mix to a smooth batter. Set the waffle batter aside for 5-10 minutes.
- In the meantime, switch on the waffle iron and preheat.
- Pour the batter into the hot waffle iron with a ladle (approx. ⅓ cup per waffle) and bake for 7-8 minutes. Leave the finished waffles to cool on a wire rack. Repeat with the remaining batter.
Notes
If you use carbonated water, leave out the baking soda.
