Let's talk breakfast: Savory or sweet? I usually prefer something sweet for breakfast. Depending on the time of year, I might have a green smoothie or smoothie bowl, pancakes, oatmeal or banana bread with PB+J.

From time to time, I also crave savory things in the morning like tofu scramble on bread. Today I have a sandwich recipe for you which you could make for breakfast or whenever you your heart (or stomach) desires a satisfying sandwich with a hearty chickpea patty or vegan "egg" patty.

Chickpea "Egg" Patty Ingredients

  • Chickpea Flour - It has a naturally savory flavor that works well for "eggy" recipes. 
  • Nutritional Yeast - Also called nooch, it will give your vegan egg patties a savory, slightly cheesy flavor.
  • Kala Namak - The key ingredient. Also known as black salt, Kala namak has a high sulfur content which results in an egg-like flavor when added to dishes. You can usually find it at Indian markets, health-food stores or online.
  • Spices - Turmeric for color, sweet paprika, garlic, onion and fresh herbs, if you like.

How To Serve The Sandwich

What you top it with is up to you and your preferences. I like fresh and juicy tomato slices, crunchy lettuce, maybe some avocado and/or vegan "cheese" slices and some type of spread.

Vegan mayo and hummus are two wonderful options.

Also give my Tomato Jam a try. It is both savory and sweet and thus adds another layer of flavor.

When you plan on making the sandwich in the future, then get started on my Fermented Vegan Cream Cheese. This will add a wonderful tangy touch to your breakfast sandwich.

Obviously, you can also simply prepare the eggy chickpea patties (no need to stick with the patty shape - how about a chickpea omelette?) and skip the bread. Serve it with a side of veggies, a dip of choice and you're good to go when you want to keep it on the lighter side.

Made from chickpea flour, the vegan egg patty is an amazing base for this savory Chickpea Patty Breakfast Sandwich.


Ingredients

Chickpea patty

  • 1 ⅓ cup chickpea flour (200 g)
  • 3 tbsp nutritional yeast
  • ¾ tsp kala namak
  • ¼ tsp turmeric
  • 1 tsp sweet paprika
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1-2 tablespoon finely chopped herbs like parsley (optional)
  • 2 cups water
  • 6-8 buns (e.g. pretzel buns)
  • tomatoes
  • lettuce
  • your favorite dip or spread


Instructions

  1. Whisk all the dry ingredients for the patties together. Add the water and stir until the batter begins to thicken.
  2. Heat a flat non-stick pan and grease the inside of dessert rings in the size of your buns with a bit of oil. Place as many rings as fit on your pan, pour some of the chickpea patty batter inside and cook on low heat for 10-15 min.
  3. Carefully flip the rings (HOT!) and press down the patty to cook it from the other side till for about 5 min till browned.
  4. Repeat with the remaining batter and assemble your sandwiches.

Notes

If you don't have dessert rings, you can also make little pancakes from the chickpea patty dough and put 2 to 3 of them on your sandwich, depending how thick they are.
