If you've never had overnight oats, you've really missed out on something. Even though soaked rolled oats and chia seeds does not sound very appetizing, it's such a tasty and versatile breakfast. This creamy and refreshing Piña Colada-inspired version with fruity pineapple is the perfect breakfast for these hot summer days.
During summer I actually like drinking fresh smoothies in the morning. But some days I just need something to bite on that keeps me full for a while. These healthy Piña Colada overnight oats come in pretty handy then. The preparation is luckily pretty easy. Just remember to to prepare everything the night before.
All you need for these overnight oats are rolled oats, chia seeds, coconut milk and another plant milk, maple syrup and pineapple. The ingredients are mixed together and placed in the fridge. The next morning you'll have your delicious surprise waiting for you. The consisteny will have gone from lighty watery to super creamy. If you are too impatient to wait that long, you can reduce the cooling time to one hour. Even though then you can't call them overnight oats anymore - but let's not be nitpickers.

Ingredients
- ¾ cup rolled oats (70 g)
- 2 tbsp chia seeds (20 g)
- ½ cup coconut milk from a can
- ¾ cup oat or almond milk
- 1 ½ tbsp maple syrup
- ¾ cup fresh, diced pineapple (120 g)
- toasted, shredded coconut* ((optional))
Instructions
- Combine the first five ingredients in a bowl. Stir in the pineapple chunks and transfer to a air-tight container.
- Place the container in the fridge over night (or for at least 1 hour).
- Stir the overnight oats and serve in two bowls garnished with toatsted coconut.
Notes
*Toast the shredded coconut in a dry pan until lightly browned.
