Piña Colada Overnight Oats

Description

These refreshing Piña Colada overnight oats with juicy pineaple and creamy coconut milk are a great alternative to hot oatmeal on those hot summer mornings!


Ingredients

Scale
  • 3/4 cup rolled oats (70 g)
  • 2 tbsp chia seeds (20 g)
  • 1/2 cup coconut milk from a can
  • 3/4 cup oat or almond milk
  • 1 1/2 tbsp maple syrup
  • 3/4 cup fresh, diced pineapple (120 g)
  • toasted, shredded coconut* ((optional))

Instructions

  1. Combine the first five ingredients in a bowl. Stir in the pineapple chunks and transfer to a air-tight container.
  2. Place the container in the fridge over night (or for at least 1 hour).
  3. Stir the overnight oats and serve in two bowls garnished with toatsted coconut.

Notes

*Toast the shredded coconut in a dry pan until lightly browned.
