What vegetable comes to your mind when you think of fall? Of course, pumpkin! In case you thought of parsnips or brussels sprouts - sorry, not today. Today it's all about pumpkin.
I don't know about you but I love pumpkin. It's one of the most versatile veggies, if you ask me. Think of pumpkin fries, soup, roasted pumpkin, or even pumpkin cake. Oh man, I really need more pumpkin recipes on my blog. Anyways, since we stopped with sweet recipes, why don't we continue right there.
Today I've got a muffin recipe for you. These orange-pumpkin with chocolate chips are super simple, super moist and super tasty! That's really all there is to say.
I know, I know, there's a bunch of recipes for pumpkin muffins out there. That's why I wanted to give my recipe a little somethin' somethin'. Well, chocolate is a good start but not that spectacular. Then I spotted the big pile of oranges on the kitchen counter ... jackpot! The orange juice gives these muffins so much moisture and fruitiness - and look at that colour! The muffins almost look as beautifully orange as pumpkins or oranges.
As usual, the recipe is oil- and refined sugar free. I used maple syrup and coconut sugar to sweeten the orange-pumpkin muffins. If you want to keep it on the healthier side you can leave out the chocolate chips or use sugar-free chocolate.
This recipe would have been great on Halloween but I am a bit late, obviously. Anyway, who needs a reason to make and eat muffins? So get your oven started. Happy baking!

Vegan Orange-Pumpkin Muffins [oil-free]

Description
Pumpkin, orange and chocolate - united in a moist and sweet muffin. These vegan orange-pumpkin muffins are oil-free and refined sugar-free and make a great snack for this fall season (updated: 11.26.18).
Ingredients
- 2 cups spelt flour (250 g)
- 2 tsp baking powder
- 1 ½ tsp cinnamon
- ⅛ tsp salt
- 1 cup orange juice, freshly squeezed (ca. 2-3 large oranges)
- 1 cup pumpkin puree (250 g)
- ¼ cup maple syrup (80g)
- ½ cup coconut sugar (80 g)
- ¼ - ⅓ cup vegan chocolate chips (40 - 50 g)
Instructions
- Pre-heat the oven to 350°F (175°C).
- Combine the flour, baking powder, salt and cinnamon in a large bowl. Blend the orange juice, pumpkin puree, maple syrup and coconut sugar until smooth.
- Stir the wet ingredients into the dry ingredients but don't overstir. Finally, fold in the chocolate chips, if using.
- Distribute the batter equally among 12 silicone muffin cups or a greased muffin tin. I don't recommend paper cups as oil-free muffins tend to stick to the paper.
- Bake the muffins for 20-25 min until golden at the top. Let them cool completely.

Can I use a 15 ounce can of mandarin oranges instead of juice?

Hi Donnalee. Good question. I would say yes, you can use a can of mandarin oranges instead of the orange juice in this recipe! Just be aware that the texture and flavor might be a bit different. To substitute, you can blend the oranges to make a juice-like consistency. If the mandarin oranges are in syrup, make sure to reduce the amount of maple syrup in the recipe to avoid it becoming too sweet.
