You prefer sweet over savory for breakfast? You're tired of eating the same things every morning and you love cookies? Then whip up this crunchy vegan cookie cereal for a perfect start to a perfect day.
I love sweet meals in the morning. My favorites at the moment are oatmeal and pancakes. But sometimes I get tired of eating "the usual" at the beginning of the day. My boyfriend and I sometimes (hardly ever) get vegan cereals but they are usually very sugary and stuffed with tons of ingredients. We recently bought a box of "cookie cereal", which was very sweet but that's pretty much it. Not much flavor and very dry. So I got the idea of making my own recipe for homemade vegan cereal.
It took me a while to get it right, but the final result turned out great. The cookies are crunchy but soften up once the "bathed" a bit in your bowl of plantbased milk - just how I like it.
The recipe is pretty simple and requires just 7 ingredients. You won't need any wheat flour for this recipe, just some ground up oats. So you can easily make this recipe gluten-free.
I used coconut sugar for sweetening as I prefered it over raw cane sugar and maple syrup in my other attempts. The coconut sugar gives these cookies a subtle sweetness and also a bit of a caramel-flavor. You will also need a bit of vanilla for tase.
To get those cookies crunchy, I used coconut oil, which also adds to the flavor. But don't worry, the coconut taste is not too strong. If you don't like the taste of coconut oil at all, go for refined coconut oil.
I tried making these cookies without a so-called "flax-egg" which is basically ground flax seeds mixed with water and it worked, too, but the dough turned out a bit crumbly so I sticked with the flax-egg as a binder.
Last but not least: Cacao nibs. They give the cookies an extra dose of crunch. And they make them look like chocolate chip cookies. You could also add chocolate chips instead, but chop them up really small.
All what's left to do is to mix everything together and shape tiny cookie balls. It takes a while but trust me, those little cookies look so cute on the baking tray. Shove them in the oven, wait a few minutes, and there you have your homemade vegan cookie cereal. If you's rather eat cookies without drowning them in milk, just make bigger cookies.

Ingredients
- ½ cup coconut sugar (80 g)
- ¼ cup melted coconut oil
- 1 tbsp flax meal + 3 tbsp water
- 1 tsp vanilla extract
- 1 ⅔ cup oat flour (170 g)
- ½ tsp baking powder
- ¼ cup cacao nibs (25 g)
Instructions
- Preheat the oven to 350 °F (175 °C).
- Mix the flax meal and the water and put aside for 10 min.
- In a large bowl, whisk together the coconut sugar, coconut oil, and vanilla.
- Add the "flax-egg" and whisk till well combined. Now add the oat flur and baking powder and stir with a spoon until it comes together to a sticky dough.
- Shape it into a ball. If the dough is too wet, wait a minute or so until the oats have absorbed some of the liquid. If it is still too sticky to work with, add a tablespoon of oat flour, or more if needed. Now add the cacao nibs and knead to incoorporate them.
- Take a bit of dough and shape it into a ball by rotating it between your hands. The balls should be 0.5-0.8 in (1-2 cm) in size. Repeat with the remaining dough and place the cookie balls on a baking tray.
- Bake the cookies for 8-11 min, depending on the size. They should be golden in colour. Remove them from the oven and let them cool. They are still soft to the tough when they are hot but crisp up once they cool down.
- Store the cookie cereal in an air-tight container at room temperature for up to a week.

I think coconut sugar works best here due to the caramel flavor. But sure, you can use regular sugar.

Hi Jace. I actually don't think all-purpose flour would work very vell in this recipe as it is quite different from oat flour in terms of binding properties etc. You could maybe try half oat half all-purpose flour. By the way, you can easily make oat flour by running some rolled oats through a food processor. 😉
