Gather your friends and make some burgers this weekend! These healthy and wholesome veggie burgers are made from kidney beans, cauliflower and almonds and taste deliciously hearty and satisfying. Add some homemade red pepper sauce on top for a sweet and sour touch.

This veggie burger with red pepper sauce was a lucky coincidence. I often test new recipes a couple of times before they go online, but the recipe for these veggie burgers was a jackpot right away. No second, or third, or fourth trial need

I bet everybody (or at least everybody eating plant based) has tried veggie burgers made from beans. I have actually tried my way through a lot of bean-based veggie burgers. Some were great, others not so much. That's why I "upgraded" this veggie burger recipe a bit with sautéd cauliflower rice, finely chopped almonds and spices, of course. The result is a wholesome, gluten-free and oil-free bean-veggie patty that's super tasty and satisfying.

My initial concern during the recipe testing was that the patties would turn out too moist and wouldn't stick together with the addition of cauliflower. However, the opposite was actually the case. The veggie burger patties can easily be shaped after a short cooling time and can easily be cooked/fried in a (non-stick) pan.

My second concern: Too little spice. I often see this problem with other veggie burger recipe. These wholesome veggie burgers, though, are everything but bland. A bit of salt, pepper, different dried herbs, cumin and paprika - and there is your aromatic and tasty veggie burger.

What would a good burger be without some kind of sauce? You can of course go for ketchup and vegan mayo, but how about trying something different? Like this fresh, slightly sweet and sour red pepper sauce! I promise, the preparation is a pice of cake. Just sauté and slightly purée the ingredients and keep the finished sauce in the fridge. It therefore makes sense to make the sauce before you prepare the burger patties, so it is cool when you're ready to serve the burgers. Well, I don't think there is anything else to say. Description

Gather your friends and make some burgers this weekend! These healthy and wholesome veggie burgers are made from kidney beans, cauliflower and almonds and taste deliciously hearty and satisfying. Add some homemade red pepper sauce on top for a sweet and sour touch.


Ingredients

Scale

Burger Patties

  • 1 onion
  • 3 garlic cloves
  • 2 cups cauliflower rice (200 g)
  • 1 can kidney beans
  • ½ cup almonds (70 g)
  • ¾ cup (gluten-free) rolled oats
  • 2 tbsp tomato paste
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp turmeric
  • ¼ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp dried basil
  • ½ tsp dried oregano

Red Pepper Sauce

  • 1 small red or white onion
  • 2 garlic cloves
  • 1 small or ½ large red pepper
  • 2 roma tomatoes
  • 3 tbsp tomato paste
  • ¼ - ½ teaspoon salt
  • 2 tbsp maple syrup or agave syrup
  • 1 tbsp rice vinegar
  • black pepper to taste

Others

  • buns
  • lettuce, tomatoes, cucumber, avocado, onion, etc.

Instructions

For the red pepper sauce

  1. Finely chop the onion and garlic. Sauté both in a pan with a bit of water for about 1 min.
  2. Cut the pepper and tomatoes into small chunks and add to the pan. Stir in the tomato paste and cook covered for 5 min on low to medium heat. Stir in between.
  3. Lastly, add salt, pepper, maple syrup and the vinegar. Cook for another 5 min without a lid. Afterwards, purée some of the sauce with an immersion blender, if desired.
  4. Place the red pepper sauce into the fridge.

For the burger-patties

  1. Finely chop the onion and garlic and sauté in a bit of water in a large pan for 1 min.
  2. Add the cauliflower rice and cook for 5-6 min until tender.
  3. Add the almonds to a food processor and process until most of the almonds have turned into fine pieces (almost like flour). Add the rinsed and well drained kidney beans and process to combine.
  4. Now add the remaining ingredients including the sautéd veggies and process until it all comes together.*
  5. Transfer the burger mixture to a bowl and keep in the fridge for at least 30 min.
  6. Heat a non-stick pan. Form 4-6 burger patties using your hands and press so that they are about 1 inc (0.5 cm) thick. Cook from both sides for 3-5 min on low heat.
  7. Serve on buns with red pepper sauce and/or toppings of choice.

Notes

*if you don't own a food processor, use ground almonds and quick-cooking oats. Mash the beans using a potato masher/fork and incorporate the other ingredients using your hands.

    I cant have seeds or nuts. Any idea what to sub for the almonds? More oats or beans?

      The almonds give a lot of texture so more beans is propbably not the best option. More oats could work. Or you could add 1/4 - 1/3 cup cooked brown rice. Let me know how it goes.
