These fluffy vegan protein pancakes without protein powder pack a punch! They are made with wholesome ingredients that keep you full and provide you with a load of healthy plantbased protein and other nutritients.

- 1/2 cup chickpea flour ((45 g))
- 1/2 cup buckwheat flour ((80 g))
- 3/4 cup peanut flour, defatted ((80 g))
- 1 cup soy milk
- 1 large ripe banana
- 2 dates
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- 2 tsp baking powder
Instructions
- Combine the dry ingredients in a bowl.
- Blend together the soy milk, banana, dates and vanilla extract until smooth. Add to the dry ingredients and stir to combine. Set aside for 4-5 min.
- Heat a non-stick pan. Use up to 1/4 cup for each pancake and bake on low heat for 1-2 min per side. The recipe makes about 12 pancakes.
- If the batter starts to thicken while making the pancakes, add a bit of liquid to thin it out.
- Serve with fresh fruits and maple syrup.
