Description

Quick, easy, and unbelievably delicious – this vegan creamed spinach with beans is ready in just 20 minutes. Served with black rice, it makes a healthy vegan dinner that is filling, protein-rich, and visually stunning on the table.


Ingredients

Scale
  • 1 onion
  • 2 garlic cloves
  • 1/2 tsp minced ginger
  • 9 oz. frozen spinach (260 g)
  • 1/8 tsp turmeric, ground
  • 1 tsp cumin, ground
  • 1/2 tsp coriander, ground
  • 3/4 cup canned coconut milk
  • 1 can white beans
  • 1/2 tsp salt
  • black pepper to taste


Instructions

  1. Dice the onion and mince the garlic. Sauté them in a large frying pan with a splash of water for 2–3 minutes. Add the ginger and cook for 1 minute more.
  2. Add the spinach to the pan, cover, and cook over low to medium heat for 6–7 minutes until thawed.
  3. Stir in the coconut milk, spices, and white beans. Cook uncovered for another 5 minutes.
  4. Season with freshly ground black pepper to taste and serve over rice.
