Description
Got some leftover bread and don't know what to do with it? Make bread pudding! This sweet dish is totally delicious and easy to make. Serve it as a dessert or even for a brunch.

- 10 oz bread (280 g)*
- 1 large carrot ((optional))
- 1 cup oat or almond milk
- 1 can coconut milk
- 1/3 cup maple syrup (100 g)
- 2 tsp vanilla extract
- 1 1/2 - 2 tsp cinnamon
- 1 pinch of salt
- 1 handfull of walnuts or almonds, chopped
- 1/3 cup raisins (60 g)
Instructions
- Preaheat the oven to 350 °F (180 °C).
- Cut the bread into cubes (not too small) and place in a large mixing bowl. Grate the carrot. Add the carrot, chopped almonds or walnuts and the raisings to the bowl and mix with the bread.
- Combine oat or almond milk, coconut milk, maple syrup, vanilla, cinnamon and salt in a seperate bowl.
- Pour the mixture onto the bread and carefully combine the ingredients.
- Immediately transfer the soaked bread into a large, flat baking dish and press down slightly using a spoon to even out the surface.
- Bake for 35-45 min until golden brown at the top. Serve warm with maple syrup.
Notes
* use a lighter, not too dense a few days old bread like sandwich bread for this recipe.
