Got a few beets lingering in the fridge? Well, then it's about time to
make some borscht. This easy and healthy vegan borscht recipe requires
just a few ingredients - and only a little bit of your time.

- 1 onion
- 2 garlic cloves
- 1 3/4 cup potatoes, peeled and diced ((250 g))
- 1 1/2 cup beetroot, peeled and diced ((220 g, 3-4 beets))
- 3 large swiss schard stalks with leaves
- 3 1/2 cups vegetable broth
- 1/2 tsp salt
- freshly ground black pepper
- 2 tbsp lemon juice
Instructions
- Dice the onion and mince the garlic. Sauté for 5 min in a large pot in a bit of water or vegetable broth.
- Wash the chard, dice the stalk and shredd the leaves. Add all the veggies plus the broth to the pot and bring to a boil. Simmer for low to medium for 30 min.
- Add the lemon juice and season with salt and pepper to taste.
- Serve with vegan sour cream and fresh dill or parsley.
