- 2 medium carrots, peeled (150 g)
- 1/2 cup raisins (70 g)
- 1 1/2 cup pitted dates (200 g)
- 1/2 cup rolled oats (40 g)
- 1 tsp chia seeds
- 1/2 cup cashews (70 g)
- 1/2 cup almonds (70 g)*
- 1/2 tsp cinnamon
- 2 - 3 oz dark chocolate (60-80 g)
- shredded coconut, dried ((optional))
Instructions
- Pre-heat the oven to 320 °F (160 °C).
- Cut the carrots into smaller chunks.
- Add all ingredients except for the chocolate and coconut to a food processor and process for 10-20 sec until sticky but still slightly chunky.
- Wet your fingers if needed and roll the mixture to small balls. Makes about 20-23, depending on the size.
- Place the balls onto a lined baking tray and bake for about 16-18 min until slightly browned. Let cool.
- Melt the chocolate in a water bath, dip one side of each ball into the chocolate (or drizzle the chocolate over the balls) and place on a plate. Sprinkle with shredded coconut, if desired.
- Place in the fridge until the chocolate has hardened. Enjoy!
- Leftovers can be stored in the fridge for up to 7 days.
Notes
*You can also use other types of nuts (e.g. hazelnuts, walnuts).
