Want to include more veggies in your day? Then enjoy these vegan pumpkin pie overnight oats in the morning. This healthy breakfast will make you feel excited to start the day.
Ingredients

- 1 1/4 cup plant-based milk
- 1/2 cup pumpkin puree
- 6 soft dates ((1/3 cup))
- 1/4 tsp cinnamon
- 1 pinch ground nutmeg
- 1 pinch ground ginger
- 1/4 tsp vanilla extract ((optional))
- 1 cup rolled oats
- 3 tsp chia seeds
Instructions
- Blend together the first three ingredients until smooth.
- Combine with the remaining ingredients and place in the fridge to thicken for at least 2 hours or overnight.
- Serve in two bowls and top with vegan yogurt, walnuts and pomegranate seeds.
Notes
If you want it a bit sweeter add more dates or a drizzle of maple syrup on top.
