Description
These refreshing Piña Colada overnight oats with juicy pineaple and creamy coconut milk are a great alternative to hot oatmeal on those hot summer mornings!
Ingredients

- 3/4 cup rolled oats (70 g)
- 2 tbsp chia seeds (20 g)
- 1/2 cup coconut milk from a can
- 3/4 cup oat or almond milk
- 1 1/2 tbsp maple syrup
- 3/4 cup fresh, diced pineapple (120 g)
- toasted, shredded coconut* ((optional))
Instructions
- Combine the first five ingredients in a bowl. Stir in the pineapple chunks and transfer to a air-tight container.
- Place the container in the fridge over night (or for at least 1 hour).
- Stir the overnight oats and serve in two bowls garnished with toatsted coconut.
Notes
*Toast the shredded coconut in a dry pan until lightly browned.
