Oil-free Blueberry Banana Bread

Description

This basic vegan banana bread with juicy blueberries is so moist, gooey & delicious – plus it’s completely oil- and wheat-free! Have it for breakast, as a snack or even for dinner with a big dollop of your favorite nut butter.


Ingredients

Scale
  • 2 3/4 cup oat flour* (275 g)
  • 3 very ripe, medim-sized bananas (300 g)
  • 3/4 cup oat or almond milk
  • 1/2 cup coconut sugar (80 g)
  • 1/2 tsp cinnamon
  • 1/2 tbsp baking powder
  • 1 pinch of salt
  • 1 cup blueberries (150 g)

Instructions

  1. Preheat the oven to 320 °F (160 °C).
  2. Blend the bananas, oat or almond milk and coconut sugar until no banana chunks are left.
  3. Add the oat flour, cinnamon, baking powder and salt to a large bowl and stir to combine.
  4. Add the blended wet ingredients and stir till everything is just cooperated – don’t overstir!
  5. Lastly, gently fold in the blueberries. Add the batter to a greased loaf pan (or use a silicon pan) and bake for about 50 min until golden brown.
  6. Let cool completely (!) before slicing it up.

Notes

*you can simply make oat flour yourself by processing oats in your food processor or high speed blender until finely ground.
