Description
Rolled oats, popped quinoa, cornflakes, peanuts and dried figs make these vegan granola bars a nutritious and delicious snack. And you don't even need to turn on the oven to make them.

- 1.5 cups rolled oats ((140 g))
- 1/2 cup popped quinoa ((15 g))
- 1/2 cup crushed cornflakes, unsweetened ((35 g))
- 1/2 cup roasted peanuts or cashews ((45 g))
- 3/4 cup dried soft figs ((100 g, 7-8 figs))
- 1/3 cup natural almond butter ((80 g))
- 1 tsp vanilla extract
- 1/2 cup rice syrup ((150 g))
- 1 pinch salt
- 1-2 oz dark chocolate ((30-50 g))
Instructions
- Put the crushed cornflakes in a bowl with the oat flakes, the popped quinoa and the peanuts. Roughly shop the figs and add to the mixture.
- Heat the almond butter with the rice syrup, vanilla extract and salt in a small pot and stir to combine. Add the liquid ingredients to the dry ingredients and mix well with a spoon.
- Pour the sticky mixture into a baking dish lined with baking paper and press into the dish with a spoon.
- Place the baking dish in the freezer for about 30-40 minutes.
- Melt the chocolate shortly before removing the granola bars from the freezer. Cut into 14-16 bars and drizzle with the chocolate.
- Store the granola bars in the refrigerator for up to 7 days.
