Easy Creamy Vegan Mashed Potatoes with Gravy [Oil-Free]

Description

These creamy vegan mashed potatoes with vegan gravy make a perfect, healthy side dish – and they are completely oil-free!


Ingredients

Vegan Mashed Potatoes

  • 2 lb potatoes
  • 3/4 cup full-fat coconut milk
  • 1/2 tsp salt
  • nutmeg and black pepper to taste

Simple Vegan Gravy

  • 1/4 cup chickpea flour* (25 g)
  • 2 heaping tbsp nutritional yeast
  • 1 tsp granulated onion
  • 1 tbsp soy sauce or tamari
  • 1/2 tsp garlic powder
  • 1/2 tsp dried sage
  • salt and pepper to taste
  • 1 1/2 cups water

Instructions

For the mashed potatoes

  1. Peel the potatoes, cut them into chunks and put them in a large pot with cold water.
  2. Bring the water to boil and cook the potatoes for about 20 min.
  3. Drain the potatoes. Then add the coconut milk and mash until you achieve the desired consistency. Season with salt, pepper and nutmeg.

For the Gravy

  1. While the potatoes are cooking you can prepare the gravy.
  2. Put the chickpea flour and the nutritional yeast into a small pot. On medium heat, toast the two ingredients for a 1-2 minutes until fragrant (make sure not to burn them).
  3. Add the spices and sage plus the water. Stir until no clumps are left. Bring to a boil and whisk until it has thickened. Take off the heat.

Notes

* Instead of chickpea flour you can also use wheat or spelt flour. I haven’t tried using other types of gluten-free flour.
