This basic vegan banana bread with juicy blueberries is so moist, gooey & delicious - plus it's completely oil- & wheat-free! Have it for breakast, as a snack or even for dinner with a big dollop of your favorite nut butter.<\/em><\/p>\n Do you also get super excited when your bananas are ripe? I do, because then I know it's time to bake another loaf of banana bread! My boyfriend and I love banana bread. And we basically inhale an entire loaf within one or two days. I've tried many different recipes from cookbooks and other blogs and of course I already have a (marbled!) banana bread<\/a> <\/strong>recipe on my blog but I decided to create one recipe that is super basic, quick to make, healthy and delicious - so here it is! <\/p>\n The base of this banana bread recipe are oats. I like to bake with ground up oats<\/strong>, as they are super cheap. But most importantly, I feel like oats bring so much flavor and moisture to baked goods. My initial concern, however, was that the banana bread would turn out too dense when I use only oat flour but it works - pretty well, actually.<\/p>\n The star of the recipe are bananas, of course. Make sure you use really ripe ones - the riper, the sweeter<\/strong>. In addition I added a bit of coconut sugar<\/strong> but you can also use raw cane sugar or other dry sweeteners of choice. I don't think liquid sweeteners would work so well, as they would probably add too much moisture but you could try (maybe use less oat\/almond milk!?).<\/p>\n Even though this is supposed to be a basic vegan banana bread recipe I wanted to give it a special touch, so I added fresh blueberries<\/strong> to the batter. And this definitely takes the recipe up a notch! Baked blueberries are so juicy and sweet - and that colour! If you don't have fresh blueberries on hand you can totally go with frozen blueberries. And if you are more into chocolate than blueberries, then go ahead and add chocolate chunks or chips.
