It\u2019s sweetened with nothing but dates, gets its buttery richness from cashew butter.<\/p>\n\n\n\n Plum season<\/strong> follows the exact same script for me every year: I miss it. Yep, shame on me<\/em>. But not this year! This year, it\u2019s all about this glorious vegan plum crumble pie \u2013 with a generous pour of vanilla sauce on top.<\/p>\n\n\n\n A classic German plum streusel pie <\/strong>relies on two things, though: lots of butter and even more sugar. Neither of them goes into my dough. And if you\u2019ve ever baked a cake without butter or margarine, you know the real sticking point \u2013 a shortcrust without fat turns out either dry or gummy, depending on what you use to replace it.<\/p>\n\n\n\n Cashew butter solves exactly that problem. Baking with nut butter <\/strong>is my favorite trick for whole-food baking anyway: it makes the dough smooth and pliable, gives it that tender, crumbly bite and adds a subtle creaminess that pairs beautifully with the tart plums.<\/p>\n\n\n\n Instead of sugar, I use date sugar<\/strong>. Its big bonus is a lovely, slightly caramel-like<\/strong> flavor \u2013 which, let\u2019s be honest, suits this pie much better than white sugar anyway.<\/p>\n\n\n\n The result:<\/strong> a crust that doesn\u2019t crumble, streusel that actually stays crisp, and a sugar-free pie that had my husband quietly reaching for a second slice.<\/p>\n\n\n[feast_advanced_jump_to]\n\n\n The most common question about a whole-food, plant-based pie like this is always the same: does it actually taste good? Add the remaining soy milk to a small saucepan along with the chopped carrot and bring to a boil.<\/p>\n\n\n\n As soon as the milk boils, remove the carrot pieces. Stir in the cornstarch slurry, maple syrup and vanilla. Bring back to a boil and let it simmer for about a minute, whisking constantly.<\/p>\n\n\n\n Pack the plums in more tightly than you think \u2013 and use every last one.<\/strong> Plums shrink quite a bit as they bake. If you really overlap the quarters snugly like roof tiles, you\u2019ll end up with that beautiful, juicy fruit layer.<\/p>\n<\/div><\/div>\n\n\n\n I haven\u2019t tested it myself, but I think it should work just as well.<\/p> <\/div> Use a light almond butter made from blanched almonds. It\u2019s a bit runnier than cashew butter, though, so you may want to start with a little less water for both the dough and the streusel.<\/p> <\/div> It\u2019s purely for the color.
