A few important pointers and tips for choosing them:<\/p>\n\n\n\n<ul class=\"wp-block-list is-style-feast-list\">\n<li><strong>Green asparagus<\/strong> \u2014 as fresh and thin as possible, then no peeling needed. <\/li>\n\n\n\n<li><strong>Rice paper<\/strong> \u2014 square sheets (about 16 x 16 cm) work best for wrapping. Round sheets work too \u2014 see tips in instructions below. <\/li>\n\n\n\n<li><strong>Chickpea flour<\/strong> \u2014 stirred into the soy milk. The rice paper is dipped in this mixture for a nice golden sheen after baking. <\/li>\n\n\n\n<li><strong>Soy milk<\/strong> \u2014 feel free to use another plant milk. <\/li>\n\n\n\n<li><strong>Smoked tofu<\/strong> \u2014 use one that isn't too firm, otherwise the smoked tofu cream becomes too crumbly. <\/li>\n\n\n\n<li><strong>Soy yoghurt <\/strong>\u2014 for the tofu cream, so be sure to use unsweetened.<\/li>\n\n\n\n<li><strong>Defatted almond flour<\/strong> (optional) \u2014 for the almond paste that goes between the rice paper layers.
