Want to include more veggies in your day? Then enjoy these sugar-free pumpkin pie overnight oats in the morning. This healthy breakfast will make you feel excited to start the day.<\/em><\/p>\n\n\n\n My first pumpkin recipe this fall season is here! If you are a pumpkin lover like I am you will enjoy these vegan and sugar-free pumpkin pie overnight oats. This simple breakfast is filling, healthy and of course delicious. It's actually a great breakfast if you want to include more veggies to your day.<\/p>\n\n\n\n\n\n\n\n Overnight oats are not much different from cooked oatmeal. They're just, well, not cooked. If you want something warm for breakfast on those really cold fall days - which I can totally relate to - just heat those vegan pumpkin pie overnight oats. It will be just as delicious.<\/p>\n\n\n\n As I already mentioned, these pumpkin-pie overnight oats are sugar-free. They are naturally sweetened with dates. If you prefer a slightly sweeter breakfast you can add more dates or add a splash or two of maple syrup.<\/p>\n\n\n\n In terms of what milk to use, I recommend something less watery - like cashew milk, oat milk or mix it up with a bit of coconut milk for that extra dose of richness.<\/p>\n\n\n\n Let's not forget those pumpkin pie flavors! First and foremost there is cinnamon. I add cinnamon to basically everything and just loooove it in my morning oats. I also added a pinch of ground nutmeg and ginger to these overnight oats but feel free to omit these. Or even use other spices, like cardamom.<\/p>\n\n\n\n What I always add to my overnight oats are chia seeds. They add this great texture and of course those healthy, brain-boosting omega-3 fatty acids.<\/p>\n\n\n\n Serve these overnight oats with soy or coconut yogurt, maybe some walnuts and dried cranberries. I think bananas would also be great. If you're feeling fancy, top it all off with some (sugar-free) chocolate chips.
